We restored three old hatching ponds on the farm a couple of years ago. The ponds are fed from the stream that runs through our land. We grow about a thousand rainbow trout every year in the ponds, some of which we release into the large lake on our farm. We either sell frozen or, upon demand, hot smoked in our tiny smokery over apple, cherry, alder or oak.

Our trout usually weigh about 2lbs when we catch them and after they have been gutted. The trout sell at £5 per lb.
