Stream Farm Organic lamb comes from our pedigree herd of Hampshire Down, a solidly British breed renowned for the quality and flavour of its meat. Hampshire Down flocks were established over 150 years ago and originated by crossing the Wiltshire Horn and the Berkshire Knot with the South Down stock. There used to be massive sales of this breed in Wilton, Overton and Weyhill, often with as many as 20,000 animals being sold at a time.

Our animals for the table are slaughtered at about 6 months at a local, family run, organic-certified abattoir in a converted church hall a few miles away and are hung there for a week before being butchered.

We know the history of each of our animals in great detail and are able to vouch for the integrity of its meat. If you want to know more about it, please do not hesitate to email us.

We sell the lamb between Easter and early Winter by the half (between 15 and 20 lbs in weight) jointed, bagged, labelled and (usually) frozen and with recipes for the less common cuts. The 2008 Spring lamb sells at £5 per lb.

Half a lamb consists of a leg of lamb, shoulder of lamb, rack of lamb, rolled breast of lamb and chump and loin chops. We also provide the neck, scrag and kidney for free.

Leg Delicious roasted with garlic and rosemary. Can also be boned and stuffed.

Shoulder There is more fat and bone than the leg but because of the fat it has a very good flavour. Allow more in weight per person than usual due to the weight of the bone.

Breast Best stuffed and rolled. Fill with a herb stuffing and then roast or braise. Also suitable for stews and casseroles.

Chump chops Compact and meaty with only a small piece of bone in the centre. To grill, brush with oil a few minutes beforehand. Don’t pierce the meat or the juices will run out.

Loin chops These have a small T- bone and contain less meat than the chump chops. They are very delicate in flavour and texture.

Rack From the best end of neck, which consists of 5 or 6 pairs of ribs.

Neck and Scrag Suitable for stews, casseroles and soups.

We can deliver our lamb within a radius of about 10 miles of the farm but also within much of central London for free. We regularly drive up the A303 and the M3, or the M5 and the M4, so we can deliver close to those roads and we do a fairly regular delivery as well to Oxford.

To encourage you to move towards buying in larger amounts less regularly rather than just for the day’s or the week’s meals, we will sell you a 3.7cu.ft chest freezer, delivered to your door, for half price (about £50) with every first order of a whole lamb. This freezer is large enough to contain not just the lamb but plenty more besides.

We include locally-produced redcurrant jelly with every order together with cooking suggestions and recipes.
